Since we have already gone over the differences between marinades, brines, dry rubs, and sauces, I figured it was time to explore some recipes! Keep in mind that they’re basically made up of an acid, a base oil, and plenty of herbs and spices for flavor. You’re welcome to experiment with various amounts of the ingredients to perfect your taste, but you’ll want to keep the basic ratio about the same.
As a continuation to the easy marinades for chicken, today we will discuss 5 easy marinades for steak. Still to come are marinades for pork and pork chops!
1) Classic
- 1/4 cup olive oil
- 1/2 cup soy sauce
- 3 tbsp brown sugar
- 3 cloves minced garlic
- 3 tbsp balsamic / red wine vinegar
- 2 tbsp Worcestershire sauce (optional)
- Salt and pepper to taste
2) Balsamic
- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
- 2 – 4 cloves minced garlic
- 3 tbsp brown sugar
- 1 tbsp oregano
- 1 tbsp basil
- Salt and pepper to taste
3) Cajun / Mexican
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 2 tbsp cayenne pepper
- 1 tbsp chili powder
- 5 tbsp lime juice (optional)
- Salt, pepper, and cumin to taste
4) Garlic and herb
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1/4 cup fresh herbs (oregano, thyme, basil)
- 3 – 5 cloves minced garlic
- Salt and pepper to taste
5) Lemon pepper
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1 -2 tbsp grated lemon rind (optional)
- 2 – 4 cloves minced garlic
- 2 – 5 tbsp pepper (to taste)
Marinades are a quick and convenient way to add flavor to your meats, since you can just leave them to soak and walk away. I recommend letting your steak marinate overnight, at least, as beef is quite a bit tougher than chicken. You still want to be careful not to over-marinate, though, as the acid can make the meat mushy after too long.
