The Ultimate Guide for Grilling Veggies

While at most barbecues the meat tends to take the spotlight, a delicious barbecue meal would not be complete without the perfect side dishes. And, there are endless possibilities: cold salads, baked beans, delicious dips, but we can’t forget the delicious veggies!

Grilling veggies usually doesn’t take too long at all, and they’re the perfect side dish for all of your barbecues, or any meal for that matter. In the spirit of our Kamado 101 series, today I’ve composed the ultimate guide for grilling veggies!

Peppers

  1. Cut and remove seeds.
  2. Lightly brush with olive oil. 
  3. Grill 5 – 8 minutes on each side. 

Pairs well with balsamic vinegar, black pepper, and Italian seasonings. 

**Best temperature: 375 – 425°F

Corn

  1. Soak for 15 – 20 minutes in cold water. 
  2. Grill, with husk, for about 15 minutes rotating occasionally. 
  3. Remove husk and silk.

**Best temperature: 325 – 375°F

Onions

  1. Peel and cut into rings or slices. 
  2. Lightly brush with olive oil.
  3. Grill 5 – 10 minutes per side. 

I like to grill my onions with potatoes, but they also pair well with a simple salt, pepper, and garlic blend. 

**Best temperature: 375 – 425°F

Potatoes

  1. Cut potatoes into 1 – 2″ chunks. 
  2. Add a tbsp of melted butter and wrap in a double layer of foil. 
  3. Grill 15 – 20 minutes on each side of the foil pack. 

I typically throw garlic and onions in with my potatoes, but plain potatoes pair well with parmesan cheese, parsley, and of course salt and pepper.

**Best temperature: 375 – 425°F

Artichoke

  1. Cut in half or in quarters. 
  2. Spread leaves open and lightly brush with olive oil. 
  3. Grill about 20 minutes on each side until the base is tender. 

Pairs well with garlic, lemon juice, Italian seasonings, and salt and pepper. 

**Best temperature: 325 – 375°F

Mushrooms

  1. Trim your mushrooms down, but do not slice them. 
  2. Lightly brush with olive oil. 
  3. Grill 8 – 12 minutes on each side, then slice them if you’d like. 

Pairs well with butter, garlic, and soy sauce. Plus, mushrooms can make a great addition to your steak. 

**Best temperature: 375 – 425°F

Zucchini & Squash 

  1. Cut into slices. 
  2. Grill 5 – 7 minutes on each side. 

Pairs well with garlic, Italian seasonings, and salt; but I like mine with salt, chili powder, and some lime juice. 

**Best temperature: 400 – 450°F
