It might just be my Irish heritage talking, but potatoes are my favorite side dish of all time. Grilled, mashed, fried, baked… doesn’t matter. Potatoes are just made of amazing and so I’m always looking for new ways to incorporate my favorite dish. Fortunately, potatoes go excellent with most kinds of grilled meat, and they aren’t hard to prepare on the grill at all.
There are dozens of different ways to season potatoes and all kinds of things you can add. In fact, I started to make a list of potato recipes and it just became way too long too quickly. I wasn’t kidding when I said I love potatoes. So, instead, I’m going to talk about the three basic methods of cooking potatoes on the grill and leave the seasonings up to you!
1. Use a foil packet
Foil packets are good for more than just veggies. In fact, you can easily cook potatoes using foil and not have to worry about losing that delicious taste. You can either dice the potatoes and add some seasonings or just wrap the entire potato and basically bake it, but be aware that potatoes take much longer on the grill than veggies do! You’ll want to plan on letting it grill for at least 40 minutes, possibly more depending on grill temperature.
2. Pre-boil them
Potatoes can take forever to cook if you’re not careful, so an easy way to get around this is to partially cook your potatoes before throwing them on the grill. Be careful to not cook them all the way through—just enough to shorten the time on the grill. After all, you don’t want to overcook them; just give them that crispy, yummy texture.
3. Throw them on the grill
If you don’t feel like babying your potatoes, then you can slice them or skewer them and then just throw them on the grill. Keep in mind that you’ll need to have your grill set up for direct and indirect heat or risk having burnt potatoes with raw insides. However, if done correctly this can result in some deliciously crispy potatoes with some really flaky and soft interiors.

Microwave for a few minutes, usually 4-5 minutes per potato. Coat with olive oil & coarse kosher or sea salt. About 30 minutes on the grill until the skin is crispy. My favorite.
